A meat cut always takes my soul away

I love meat and I love doing BBQ with my lovely friends. therefore, choosing the right meat is crucial to make the party more perfect.

Normally, I choose pork because of its affordable price, sustainable raising, easy-cooking, and deliciousness.



WHAT MEAT CUT TAKES MY SOUL AWAY?

Before getting to know my favorite cut. It is better to understand briefly about the pig.

Pig is one of the species of ungulates. They are raised extensively around the world. Depending on the different conditions such as climate, regions, breeding methods ..., they will have a slightly different shape and quality will also be affected. The pig species is thought to be of Eurasian origin, grouped under the scientific name sus- of the pig family. They were later domesticated into native pigs and continue to be bred to provide food for humans. Pigs have species, for example, wild boar, Yorkshire glide, java island wild pig, Palawan bearded pig, ... however, the portions of their meat are equally arranged. therefore, it is easy to choose your favorite piece of meat.


That is right, my favorite part is the Boston butt-This cut is located right behind the pig's neck and resided between the picnic ham and clear plate. It has a tender and juicy texture like "Kobe beef" to me.

It is perfect for grilling and BBQ because of its texture, therefore, applying this dry cooking method to mostly keep all the juice and flavor of the meat.



Is it EXPENSIVE?

fortunately, it is cheap and affordable. I usually buy it at several Chinese and Vietnamese Markets to get better prices, also to get relative ingredients.

it is around $2-3 per pound. I bought approximately 2 kgs of it and can be able to fully fill up three bellies in my house.

Ingredients

1kg pork butt

2 dried purple

onions 2 dried

garlic bulbs

¼ oranges

A few scallions

Some other essential spices: Salt, honey, ground pepper, monosodium glutamate, condensed milk, oyster oil, fish sauce, soy sauce ...

Preparing the meat:

First, you rub salt on the surface of the meat and then rinse it many times with water to remove the fishy smell. Let the meat drain on the basket or use a towel to pat dry and then flatten the meat into 1cm in height and your chosen length (just for evenly cooking)


Next, you use a special tool to beat softly the meat. If you don't have a special tool, you can use the knife handle to beat. This action will make the meat softer, and easier to season.


Making the marinating sauce:

Preparing the remaining ingredients, including Peeling onions, crushed, crushed; squeezed orange juice into a small bowl.


Next, you mix the corner sauce. You can refer to the ratio: 1 tablespoon fish sauce, 1 teaspoon soy sauce, 1 tablespoon oyster oil, 1 tablespoon honey, 1 tablespoon condensed milk, 1 tablespoon cooking oil, ½ teaspoon salt, ½ teaspoon monosodium glutamate, ½ teaspoon ground pepper, chopped and purple onion, mix well.


Then, you add the juice to the bowl of sauce, mix well. Honey has the effect of making more eye-catching colors after baking.


Marinating and grilling:

Combining the sauce and flatten meat together and marinating for at least 2 hours

After that, it is ready to grill on a charcoal stove or simply pan-frying.


What to eat with:

Vietnamese usually enjoy this with broken rice and pickle dressing with sweet and sour fish sauce or vermicelli instead of rice, or simply grilling as skewers.
