Canh Chua- Vietnamese Sour Soup with Basa steak

The story behind this soup
Vietnam is a paradise of soup dishes. However, there is one dish that has followed me since I was a very kid- that is Canh Chua (Vietnamese sour soup with fish). My mom is an expert at cooking this soup, and she often makes it for my family when the summer comes every year. I was used to be a vegetable hater and whatever contains green stuff, I got frustrated with not eating them. Nevertheless, whatever I did not like, my dad was the one who would buy it for me to eat until I get familiar with it. Canh Chua was not excepted, to make this soup, the vegetable is costly-I mean it needs a lot of vegetables, especially the vegetable that I hated most. However, because of that, I have started to like eating more vegetables and day by day understanding how important they are for my health.
How to cook it
Ingredients:
Basa fish 3 pieces
Peeled tomatoes 1 ea.
Taro stalk 3 stalks
Beansprout 300 g
Chili 3 ea.
Okra 300 g
Fresh lemon 1 ea.
Pineapple 1/2 ea.
Garlic 2 cloves
Tamarind 1 tbsp
Salt 1 teaspoon
Sugar 1 tbsp
Fish sauce 1 tbsp
Oil 1 tablespoon
Cilantro & cilantro & cilantro & scallion 1 a little
Start cooking
First: mise en place
Melt the tamarind with a cup of boiling water, wash the fish, soak it with a paper towel, then cut up the seeded chili and apply it evenly on the fish slices, sprinkle a little salt over the fish and marinate for 30 minutes.
Wash tomatoes, cut off the roll, pinch the cross on the skin, boil tomatoes lightly with hot water for 30 seconds, then put in a cup of cold water and peel off the tomatoes, chopped tomatoes in the shape of the orange.
Washed okra, cut small pieces, peeled, and chopped along the mosquito net.
Scallion, cilantro, cilantro, cilantro, minced garlic.
Second: Starting cooking
Put a stockpot on the stove, add oil, garlic, sauté golden garlic, then take out to separate, then you pour water into the pot, the tamarind juice has just been poured into the pot, add sugar, then cover to cook until If the water is boiling, add the fish and cook for 10 minutes over a simmering flame.
At the end of 10 minutes, you take the fish out, put the pineapple and tomatoes in the pot to cook, when the water is boiling, add fish sauce, lemon juice, and stir well. When the water boils again, you put the mosquito net, okra, and the bean sprouts to cook. When the water boils again, add the cilantro, green onions, cilantro, and cilantro and cook for a few minutes, then turn off the heat.
Finally, you scoop the soup into a bowl, add fish slices, sprinkle with golden garlic, and enjoy right away with hot rice.

Yummy, flavorful, tasty, refreshing are words that I can describe this dish. The soup is pure and clear with an excellent combination of natural sweetness and sourness.

Like my mom, she always shares this soup with my ant who lives next to my house whenever she makes it. Me too, living far away from home, whenever I replicate this soup, sharing is an unmissing part to make this dish much more delicious, and feedback is needed from housemates. However. instead of receiving feedbacks, my housemates always keep asking" another one please" which makes me know that my dish can amuse them.

Making this soup is such a challenge in looking for ingredients because there is something that is hard to find in Canada compared to my country. However, I could still be able to find the main ingredients which are crucial to getting the right taste, and I considered it was a big success. the only thing that I did differently was instead of using fresh tamarind, I used an instant bag of tamarind as a substitution.
From this experience, I learned that being a great chef, I have to be FLEXIBLE in any condition of lack of stuff, and sharing food is a way to connect everyone around me together. Those are two things that I learned and I think they are extremely helpful for my cooking career at my restaurant in the future.
