Vietnamese daikon 'n' carrot pickles

Pickles have a big role in Vietnamese cuisine and they are presenting in some authentic dishes such as Banh mi, Com tam, etc. and whoever ate Banh mi without radish and carrot pickles mean that they are missing an important factor of this dish
This type of pickles is not hard to make and usually, you can instantly eat it after 30 minutes of preserving process.
So, How to preserve radish and carrot pickles: (recipe)
Ingredient
rice vinegar 240ml
sugar 100g
salt 100g
1 medium daikon (radish) peeled
1 large carrot peeled
Preparing
First, you mix vinegar, sugar, and water in a pot and then put on the stove to heat over medium heat, stirring until the sugar dissolves. When the sugar and vinegar mixture boils, turn off the heat and let it cool.
Then, peel carrots, radishes, and rinse. Cut carrots and radishes with the julienne technique
Put carrots and radishes in a large bowl, add a little salt, and mix well. Marinate the mixture with salt for about 30 minutes until the radish and carrot feel softer.
Rinse carrots and radish with boiled water to cool off excess salt. Put the mixture in a glass jar. Pour the original vinegar, sugar mixture to cover all types of tubers. Leave the glass in its place after one day can be eaten. When the acidity is satisfactory, store it in the refrigerator to eat gradually.
Reflection
The taste of this pickle is expected sweet and sour. moreover, the texture needs to be soft on the outside and crunchy on the inside.
After making this Vietnamese authentic pickle, I had got almost all the taste expected, but the texture was failed a bit because I was placing them in a warm and cool marinated water, so they pickle was a little bit too soft. however, this problem can be solved easily next time in order to achieve all the needs of this pickle.
As I mentioned, this pickle would be an excellent combination with Banh Mi, Com tam, and many other Vietnamese dishes.
